My Cookout Menu Formula:
2-3 appetizers
2-3 meat items (1 not red meat) + vegetarian items if necessary
1-2 starchy sides for less than 10; 2-3 for more than 10
1-3 green/veggie-based items for less than 10; 2-3 for more than 10 (I did 4 for a larger crowd!)
1 fruit
2-3 desserts
Don't forget buns, lettuce, tomato, onion and condiments (bring out a couple of special condiments like pickled onions or chipotle aioli to level it up!)
